What I Eat In A Week (2)

Really sorry that this went up incomplete, have sorted it today and will re-release it so it gets sent out correctly!  Have been having issues with my eyes so I just had to have some time away from the computer so as not to strain them any more!

I have started trying to eat a little more healthily this week.  I put weight on following my stoma surgery which was very much needed as I was very underweight at the time.  I put on a little more than I had been previously.  After weighing around 50-52 kilos all my life, I was around 57kg which I was more than happy with.  This has been gradually creeping up more recently and I am now over 60 kilos and not happy about it.

I know many people will say I am not overweight and don’t need to worry but I am just not happy at this current weight and would like to lose a little.  Since the issues with my rapid weight decline due to Crohns Disease, I have struggled with body dysmorphia.

Body dysmorphic disorder (BDD), or body dysmorphia, is a mental health condition where a person spends a lot of time worrying about flaws in their appearance. These flaws are often unnoticeable to others.

I was down to 40 kilos for the almost 6 months before my surgery so I got so used to my appearance back then,, when I first began to put weight on I really struggled with thinking I looked huge.  Now I can look back at the photos of me when I was poorly and realise just how awful and sick I looked, but back then I was really trapped by these feelings and hated it.

I am still on steroids and this has meant my face has taken on the dreaded ‘moonface’ appearance which also makes me extremely self conscious.  You can see more about my journey with steroids on the post I did for TalkHeaklth – Living On Steroids

My diet isn’t terrible but I am trying to choose more healthy snacks and eat little and often.  I will also be aiming to keep up my fluid intake as hydration is extremely important for ileostomates.  I thought I would let you know what I have been eating this week in case you want some inspiration and meal ideas.

Wednesday

Breakfast

Bacon (fat off and grilled), half a can of chopped tomatoes, mushrooms (cooked in spray coconut oil) and scrambled eggs (2)

Lunch

Half a carton of chicken, parsnip and rosemary soup with one slice of bread

Strawberries with a pot of vanilla bio yogurt

Snack

Two sticks of cheese with an apple

Dinner

Mexican Pork One Pot.  This was a recipe from my Simply Cook box and was delicious!  I really enjoyed the flavours and just switched out the beans for some peppers as my ostomy doesn’t do well with beans!

One slice of toast, wilted spinach, ham, two soft boiled eggs, mushrooms (cooked in spray coconut oil)

I really like this oil but the kids and Ste aren’t fans of it on everything as it can leave a coconut flavour.  There are all different oils available in the spray from though. I also had one of the kids innocent smoothies – not just for kids!

A banana and two cracker ‘thins’.  Picked these up from Aldi and they are lovely!  Will definitely get them again if I spot them

Dinner

I love these dinner packs from Aldo – really simple, great flavours and not too pricey!  I used the chicken tikka set today and had it in wraps.  Could only eat two of them, even though I bought the smaller sized wraps!

Tomato soup with cheesy toast fingers.  I have a huge issue with my cheese intake and know lowering it will help with the weight loss.  I am trying!  I only ate half the soup as it was quite rich and aggravated my tummy.

Dinner

Absolutely smashed tea tonight with my ‘Alternative Cottage Pie’.  I used the leftover pork mince with veg and a diced apple in it, topped with cheesy mash.  Was beautiful!

Bowl of rice krispies and a banana.  Excuse the leaf, me and Ste had a joke about making things look Instagram worthy!

Weight Watchers Ready Meal – Spicy Mac and Meatballs.  After visiting Ste I wanted something quick and easy so heated this in the microwave.  It was super tasty with a nice kick and I would buy it again!

I made some homemade salsa today with tomato, red onion, garlic and a bit of chilli.  Had it with some of the cracker thins, ham and cheese.  Bio yoghurt for after.

Wild Mushroom Pasta – another recipe from my Simply Cook box and it was absolutely delicious!  Definitely a fave!

Apologies again for this going out incomplete.  I don’t think it has been too bad a week but have noticed when I wake up late I don’t have breakfast and get more hungry as the day goes on.  I don’t think it is too bad for my first week but will keep going!  Let me know in the comments if you like to see more of these and whether you would like me to include recipes.
