Recipe – Honey And Mustard Chicken

This was a bit of a last minute throw it all together and pray type of recipe but it turned out amazingly well!  It was another one that I gave to the boys and they both ate it all which is fantastic as I have mentioned before, they can be fussy! Riley said he especially liked the potatoes in it, covered with the honey and mustard sauce and I have to agree!

Honey And Mustard Chicken

Ingredients

  • Two chicken breasts, each cut into two or three smaller portions
  • Two or three large potatoes, chopped
  • One tablespoon minced garlic
  • One tablespoon garlic powder
  • Five tablespoons dijon mustard (TIP – you could also use 2 tablespoons of dijon and three tablespoons of wholegrain mustard as an alternative)
  • A quarter cup of honey
  • Salt and Pepper
  • Olive Oil
  • Two tablespoons water

How To Make It

1 – Preheat oven to 200*C

2 – I sprayed two or three sprays of olive oil into my pan and seared the chicken breasts.  Once browned, leave up to two tablespoons of the chicken juices in the pan and drain the rest

3 – Add in the garlic and cook until fragrant which takes around a minute.  Add in the honey, mustard, water and garlic powder and stir.

4 – Add the potatoes and stir so the chicken and potatoes are covered in the sauce.  Simmer for two minutes

5 – Pour into ovenproof dish and place in oven for around 30 minutes, until chicken is cooked through

6 – Serve with steamed vegetables
