Today Ste made me an amazing tea and I’ve asked him if I can share the recipe as I think you will all love it!

For The Pizza Sauce
Ingredients
1 tin of chopped tomatoes
2 tablespoons tomato puree
1 large garlic clove (minced)
Teaspoon dried mixed herbs
2 spring onions (diced)
Salt
Pepper
How To Make It
- Put the chopped tomatoes and tomato puree in a saucepan and bring to the boil
- Reduce the heat to a simmer and add the other ingredients
- Leave it to reduce and thicken
- Blitz with a hand blender till smooth
- This made more sauce than was needed and the rest went into the freezer once cooled to use in the future
For the Pizza Naans
Ingredients
Four individual plain naan breads
Sliced chicken breast (cooked in Ste’s secret Indian marinade but you could use a curry paste to your desired taste)
Mushrooms (diced very small to be ostomy friendly)
Mozzarella Cheese (grated)
Red onion (finely sliced)
Finely chopped fresh coriander
How To Make It
- Spread the tomato sauce over each naan bread
- Add some grated mozzarella followed by the red onion and mushrooms
- Place the sliced cooked chicken over the top
- Finish with another sprinkle of grated mozzarella and some fresh coriander
- Cook in a preheated oven (gas mark 5) for approximately 9 minutes until; cheese is golden
For the Indian style Salad
Ingreduients
Tomato (diced)
Cucumber (diced)
Finely sliced red onion and spring onion
Finely chopped coriander
How To Make It
- Prep the salad vegetables and mix together
For the Mint Sauce
Ingredients
Large tablespoon creme fraiche
Finely chopped fresh mint (to taste)
Pinch of fresh parsley
A couple of splashes of vinegar
How To Make It
- Combine all ingredients in a bowl
- Pop into the fridge until ready to serve
I absolutely loved this, the flavours were amazing and it was a great twist on one of my favourite foods – pizza! To make the chicken extra tasty, you can put it in the marinade you choose in the morning in the fridge and let it sit all day before cooking as you make your pizza sauce. It is also an easy enough recipe to get the kids involved with too and would be good for introducing new flavours to them.
