Recipe – Baked Strawberry Crumpets

It has been a while since I posted a recipe but I have had an amazing breakfast this morning, so wanted to share it with you all! It feels so perfect to be sharing this at the beginning of Autumn as it is comfort food at it’s best!

Ingredients

One large egg

50ml almond milk (although you could use cow’s milk if you prefer)

1 tsp vanilla essence

2 crumpets

Strawberries (about 7 – 8 chopped up)

Strawberry jam

What To Do

  1. Cu the crumpets in half and pop them in an ovenproof dish
  2. Whisk together the egg, milk and vanilla essence, then pour over the crumpets
  3. Sprinkle over the strawberries and spoon a little jam over each crumpet

4, Pop into a preheated oven (gas mark 6) for 15 – 20 mins

5. Serve as is or you can pop on a squirt of chocolate sauce! I used toffee sauce and obviously had a cuppa on the side!

I think next time, to make this extra autumnal, I will add half a teaspoon of cinnamon to the egg mix and rather than sauce, sprinkle on a little cinnamon sugar. This will serve one but it is super easy to double or even triple up if you are making it for a family. It is also one kids could definitely help with, with some supervision/help with the cutting of the strawberries and using the oven depending on their age.
